This is a recipe that I’ve wanted to share with you for ages, and one that I started working on after watching Aaron Franklin’s wonderful Masterclass last summer.
I purchased Masterclass specifically because of his class. I had been to Austin years ago and loved his legendary Franklin BBQ restaurant, and wanted to see how I’d do making his recipes.
Well, this is my unofficial thank you to Aaron for sharing all of your secrets, because both the brisket and the smoked pork butt I’ve tried from his class were mouthwateringly delicious.
While Aaron uses a different kind of smoker than I do, I was able to adapt most of the principles and cook this in my Traeger. So long as you follow the temperatures given, I’m sure you could make this in any smoker setup that you have.
